- Heat a heavy cast iron pan in high heat until extremely hot, about ten minutes.
- Dip each fillet in melted butter until both sides are well coated.
- Sprinkle fillets evenly with Yummy Blackening Seasoning.
- Place fillets in hot skillet. Pour one teaspoon melted butter on top of each fillet; cook two minutes until bottom is blackened. Flip fillets, pour one teaspoon melted butter an cook 2 to 3 minutes until both sides are blackened. Repeat until done. The fish is done when it appears to flake apart.
