Yummy Cajun Rice

Ingredients

  • 3 cups of rice 
  • 4 tbsp of tomato paste 
  • 3 bell peppers (red, yellow, green) 
  • 1 medium onion 
  • 3 cups chicken broth 
  • 2 garlic cloves 
  • 1 cup of cooked beans, drained
  • Fresh greens of your choosing for garnish (green onions, parsley) 
  • 1 tsp of Yummy Seafood Seasoning 
  • 1 tsp of Yummy Blackening Seasoning

 

Preparation 

  • This and every Yummy recipe cooks faster when you start by chopping all the veggies first. 

-Chop the bell peppers

-Chop the onion 

-Mince the garlic 

  • Start by cooking the rice. In a pot, pour 3 cups of chicken broth and ½ cup of water, mix in the rice, cover, and let it cook. In the meantime, let’s make the yummy sauce. 
  • In a hot pan, heat about 1 tbsp of oil and add the onion and cook for about 2 minutes until it looks crystalized. Add the chopped bell peppers and sauteed for another minute or two until the veggies are slightly tender. 
  • Now the garlic. It usually goes last because it can burn faster than the other veggies. 
  • You have all the veggies in the pan, add about 1 tsp of Yummy Seafood Seasoning and a dash of Yummy Blackening Seasoning. The combination of both seasonings on the veggies really brings out all the New Orleans flavors to play.
  • Last but not least, bring the tomato paste to the pan and marry with all the veggies.

 

  • Now we need to bring together the sauce and the rice. 
  • Once your rice is almost ready, mix in the sauce and stir mixing all the ingredients. 
  • Add the beans and cover for a couple more minutes to incorporate all the flavors. 

 

Serving 

  • Sprinkle some fresh greens, parsley or green onions.
  • This a complete meal, but you can also serve it with chicken, fish or meat.
  • This and all Yummy recipes are best enjoyed when shared with friends and family.
