Creamy Fish and Spinach Casserole

Ingredients 

  • 1 pound fish chunks (cod, flounder, white perch, bass) 
  • 1 package of fresh spinach 
  • 1 small onion 
  • 2 tbsp butter (unsalted)
  • 2 garlic cloves 
  • 1 lemon
  • 2 eggs 
  • 1 cup milk 
  • 1 cup Parmesan cheese 
  • 1 cup Mozzarella cheese
  • 1 tbsp of Yummy Seafood Seasoning 
  • 1 tsp of Yummy Blackening Seasoning

 

Preparation 

  • First things first, cut the onion into rings and mince the garlic. 
  • Preheat the oven at 350F 
  • In a hot pan with a drop of oil, place the spinach and cook for a minute or two until it has reduced its size. A package of spinach can turn into a handful. Set aside
  • Cook the onions for a minute or two, same with the garlic. Is just to seal the flavor before baking them with the rest of the ingredients. Set aside 
  • In a mixing bowl, whisk the eggs, the melted butter, the milk, ½ cup of the Parmesan cheese, and when all the ingredients are well mixed together add 1 tbsp of  Yummy Seafood Seasoning and 1 tsp of Yummy Blackening Seasoning . The combination of both will make this casserole one to remember, bringing out all of New Orleans flavors.
  • As a final touch add the onions, spinach.

 

Baking 

  • Spray some oil into a oven safe bowl. Add the mix and place the fish chunks. 
  • Cover them with sliced Mozzarella, Parmesan and sliced lemons as garnish on top.
  • Bake for 20 -25 minutes. 

 

Serving 

  • Serve with a side of white rice or salad.
