Yummy Stuffed Artichoke

Ingredients

  • 2 big artichokes 
  • 1 cup Italian breadcrumbs 
  • 1 cup Parmesan cheese 
  • ½  Mozzarella ball 
  • A handful of fresh green onions 
  • ½ cup of bacon bits 
  • 2 garlic cloves 
  • Olive oil 
  • 2 lemons
  • 1 tsp of Yummy Seafood Seasoning 
  • 1 tsp of Yummy Blackening Seasoning

 

Preparation 

  • First, we need to prep the artichokes. Cut a flat top about ⅓ and trim the stickers using scissors. 
  • The stem has to go to, we need the artichokes to be able to stand. 
  • Before stuffing them, rinse them and place upside down to drain. 

 

Preparation – Stuffing – 

  • In a mixing bowl, mix the breadcrumbs, Parmesan cheese,  the minced garlic, the chopped green onions, bacon and 1 tsp of Yummy Seafood Seasoning with 1 tsp of Yummy Blackening Seasoning. The combination of both seasonings will make the artichokes burst in flavor bringing out all of the New Orleans seasonings.
  • As a final touch, add 2 tbsp of olive oil to the mix. 
  • Stuff the mix into the artichokes, pressing gently and spreading the leaves, filling them each if possible. 
  • Once you are finished, place a slice of mozzarella on top and pour some olive oil all over the artichokes. 

 

Cooking

  • Place snugly into a pot to prevent them from falling over. Fill the pot with about 2 fingers of water
  • Add a lemon, chopped in quarters, into the water. 
  • Cover the pot and cook on low medium and bring to a boil. 
  • Lower the heat and cook for 15-20 minutes. 
  • Check from time to time that there is still water in the pot, otherwise your artichokes will burn. 
  • You’ll know it’s ready when the leaves can be pulled off. 

 

Serving 

  • Serve with a side of white rice or salad.
