Ingredients
- 15-20 oz fresh grouper or cod. Keep the head
- 1 zucchini
- 1 small onion
- 2 celery stalks
- 1 cup of carrots
- 1 red bell pepper
- 1 can diced tomatoes
- 6 cups of chicken broth
- Fresh parsley for garnish
- 2 tbsp of Yummy Seafood Seasoning
- 1 tsp of Yummy Blackening Seasoning
Preparation
We need to chop the veggies first for the recipe:
- Slice the carrots
- Slice the zucchini
- Dice the onion
- Chop the celery
- Chop the bell pepper into small pieces
- Before cooking the fish, add about 1 tbsp of Yummy Seafood Seasoning to the fish previously chopped into chunks. Let it wait it’s turn to be cooked while it absorbs all the New Orleans cajun flavors.
- In a medium to a large pot, heat up 2 tbsp of olive oil.
- First, we need to soften the veggies. Cook the carrots, onions, bell pepper and celery for about 5 minutes stirring constantly until the veggies are tender. Sprinkle a dash of Yummy Seafood Seasoning to waken up all the cajun flavors.
- Pour the chicken broth, add the tomatoes and zucchini (we add them last because they will soften faster than the rest of the veggies).
- If you have the fish’s head, add it to the mix. It will add and extra punch of flavor to the soup.
- Add 1 tbsp of Yummy Seafood Seasoning and a dash of Yummy Blackening Seasoning .
- Bring to a boil and reduce heat to minimum, simmer for 6-8 minutes.
- The fish goes at last. Add the chunks of fish and cook for 5 minutes.
- For a final touch, a fresh handful of chopped parsley to seal all the flavors.
Serving
- A side of white rice or french bread is a perfect match
