Yummy Oysters Rockefeller

Ingredients 

  • 24 oysters 
  • 1 stick of butter (unsalted)
  • ½ medium onion 
  • 1 cup of milk
  • 2 garlic cloves 
  • ½ package of spinach 
  • A handful of fine bread crumbs 
  • ½  cup of Parmesan cheese
  • ½ cup of Jack cheese (shredded) 
  • ½ cup of Mozzarella cheese (shredded) 
  • 1 tbsp of Yummy Seafood Seasoning 



Preparation 

Before we start cooking, pre-heat the oven to 450F. 

 

  • In a medium pot, heat about 1 tbsp of olive oil. On medium heat, cook the chopped onion and the spinach for about 3-4 minutes, until the spinach has reduced to a minimum. Add the minced garlic along with the butter, until it has melted completely. 
  • Reduce the heat and pour the milk and the combined shredded cheese, mozzarella, Jack and Parmesan into the pot. 
  • Sprinkle about 1 tbsp of Yummy Seafood Seasoning. Stir constantly to marry the flavors and create an even and thick sauce. 

 

Baking

  • After cleaning your oysters, place them on an oven-safe cookie sheet, and spread 1 tbsp of the sauce on each. 
  • Top with fine bread crumbs and a dash of Parmesan cheese. 
  • Bake for 8-10 minutes or until you see them bubbling.

 

Serving 

  • Serve with a side of lemons
