Creole Catfish & Shrimp Stew

Ingredients: 

  • 1/2 pound catfish – fillet
  • 1/2 pound shrimp – cleaned, shelled 
  • 1 bay leaf 
  • 3 tbsp of oil
  • 6  tomatoes 
  • 1 garlic clove 
  • 2 celery stalks 
  • 2 green onions 
  • 2 tbsp all-purpose flour
  • 1 bell pepper – yellow or red
  • Tabasco sauce or pepper flakes  
  • 2 tsp of Yummy Seafood Seasoning 

Preparation 

  • In a medium pot, heat up the oil. Add flour to it and stir at medium heat until the flour has reached a golden brown color, about 3-4 minutes. Be careful not to burn the flour. 
  • For this recipe, it serves you better if you have all the veggies previously chopped: green onions, garlic, celery, tomatoes, bell pepper. 
  • Add the minced garlic with the green onions, celery, and bell pepper. Stir for about 3-4 minutes until the veggies are tender. 
  • Let’s add the tomatoes. We’re using about 6 tomatoes but you can also replace it with 1 can of tomatoes or use a mix of tomatoes and 2 tbsp of tomato sauce. 
  • Pour ¼ cup of water into the mix. Not too much, just enough to help cook all the ingredients. 
  • Now the key ingredient: 1 tsp of Yummy Seafood Seasoning and a bay leaf. This recipe usually goes with Tabasco or Pepper Flakes, add it as desired. 
  • It is time to let it simmer and cook for about 20 – 25 minutes. Don’t leave it unattended, stir occasionally until it thickens.
  • Next, let’s put in the fish and shrimp adding 1 tsp of Yummy Seafood Seasoning. Cover the pot and let it cook for another 7-9 minutes. You’ll know it’s ready when the fish looks flaky and the shrimp orange. 

Serving 

This and every other Yummy recipe tastes better when shared with friends and family. Also with a side of white rice or french bread.
