Rainbow Veggie Salad

Ingredients 

  • 1 cup red beans 
  • 1 cup green peas 
  • 1 cup green beans 
  • 1 small onion 
  • 1 bell pepper (any color) 
  • 1 cup of carrots 
  • 1 cup beets 
  • 1 tomato
  • 1 lemon 
  • 1 tbsp of Yummy Seafood Seasoning 

 

Preparation 

  • First let’s chop the veggies, salad size. 
  • Slice the carrots
  • Slice the beets 
  • Slice the bell pepper 
  • Slice the onion 
  • Chop the tomato in small bites 
  • Chop the green beans 

 

  • In a small pot, boil the veggies(carrots, beets, beans, peas) for 3-5 minutes until tender and drain the water. 
  • If you wanna make this recipe very quickly, use canned beans. If not, soak the beans the night before and cook them for about 40 minutes until tender. Drain the water and serve with the rest of the veggies

 

Serving 

  • In a deep bowl, serve all the veggies you previously boiled, add the sliced onions and chopped tomatoes, and the beans.  it will be a display of colors, that’s why the name, Rainbow salad. 
  • Squeeze the lemon juice and sprinkle about 1 tbsp of Yummy Seafood Seasoning. Stir well and enjoy! 
  • We made this recipe vegetarian friendly, but you can change it by adding tuna, chicken or beef. 
  • This and every Yummy recipe tastes better when shared with friends and family.
