Ingredients
- 1 carrot
- ¼ cup of corn
- 2 garlic cloves
- 1 red onion
- ¼ cup peas
- 1 tbsp raisins
- 1 tsp cumin powder
- 1 tsp Turmeric powder
- 2 1/2 cups vegetable broth
- 2 bell peppers any color
- 2 cups of rice (for 3-4 people)
- 1 tsp Yummy Seafood Seasoning
Preparation
- In a hot medium saucepan, add olive oil about 1 tbsp and heat up the chopped onions and the garlic. Stir until the onions are crystallized, about 3 minutes.
- Add the cumin, turmeric, Yummy Seafood Seasoning and stir to prevent from burning.
- Let’s add the chopped carrots, chopped bell peppers, peas, raisins and corn. Cook for about 3-4 minutes to soften the veggies.
- Pour 2 ½ cups of veggie broth, bring it to a boil.
- Add the 2 cups of rice and cover the saucepan.
- Cook until the rice is done, about 10-12 minutes.
Serving
- The recipe is made as a vegetarian meal, but you can change anything from here to make it as you please.
- Serve with a side of fried chicken or add any diced meat to the mix while cooking
- If you change the veggie broth for chicken broth, it adds a fresh bold flavor.
