Summer Rice

Ingredients 

 

  • 1 carrot 
  • ¼ cup of corn 
  • 2 garlic cloves
  • 1 red onion 
  • ¼ cup peas
  • 1 tbsp raisins 
  • 1 tsp cumin powder 
  • 1 tsp Turmeric powder 
  • 2 1/2 cups vegetable broth 
  • 2 bell peppers any color
  • 2 cups of rice (for 3-4 people) 
  • 1 tsp Yummy Seafood Seasoning 

 

Preparation 

  • In a hot medium saucepan, add olive oil about 1 tbsp and heat up the chopped onions and the garlic. Stir until the onions are crystallized, about 3 minutes. 
  • Add the cumin, turmeric, Yummy Seafood Seasoning and stir to prevent from burning. 
  • Let’s add the chopped carrots, chopped bell peppers, peas, raisins and corn. Cook for about 3-4 minutes to soften the veggies. 
  • Pour 2 ½  cups of veggie broth, bring it to a boil. 
  • Add the 2 cups of rice and cover the saucepan. 
  • Cook until the rice is done, about 10-12 minutes. 

 

Serving 

  • The recipe is made as a vegetarian meal, but you can change anything from here to make it as you please. 
  • Serve with a side of fried chicken or add any diced meat to the mix while cooking
  • If you change the veggie broth for chicken broth, it adds a fresh bold flavor.
