Ingredients:
- 1 carrot
- 1 bay leaf
- 1 small onion
- 2 garlic cloves
- 2 celery stalks
- 1 cup short pasta
- ½ cup green peas
- 2-4 chicken thighs
- 4 medium potatoes
- 4 cups of Chicken broth
- 1 tbsp of Yummy Seafood Seasoning
Preparation
- In a large pot over medium heat, add 1 tbsp of oil and cook the chopped onions for about 3 minutes. Once they are crystalized, add the chopped garlic cloves.
- Next, add the chopped carrot, the green beans, celery stalks, and the potatoes previously chopped in half.
- Pour the chicken broth, about 4 cups.
- Sprinkle the Yummy Seafood Seasoning, it’s robust thyme punch is perfect for the soup! Next, add the bay leaf.
- After this, add the chicken thighs. Cover the pot and let it cook for about 12-15 minutes until the chicken is no longer pink.
- Mix in the short pasta and cook for 3-4 minutes. The short pasta cooks faster so make sure it doesn’t stay longer cooking or it will get soggy.
Serving
- Nothing says I love you like a bowl of chicken soup.
- You can serve it with a side of french bread but this recipe is delicious all by itself.
