Yummy Chicken Soup

Ingredients: 

  • 1 carrot
  • 1 bay leaf
  • 1 small onion 
  • 2 garlic cloves
  • 2 celery stalks 
  • 1 cup short pasta
  • ½ cup green peas
  • 2-4 chicken thighs  
  • 4 medium potatoes 
  • 4 cups of Chicken broth 
  • 1 tbsp of Yummy Seafood Seasoning 

Preparation

  • In a large pot over medium heat, add 1 tbsp of oil and cook the chopped onions for about 3 minutes. Once they are crystalized, add the chopped garlic cloves. 
  • Next, add the chopped carrot, the green beans, celery stalks, and the potatoes previously chopped in half. 
  • Pour the chicken broth, about 4 cups.
  • Sprinkle the Yummy Seafood Seasoning, it’s robust thyme punch is perfect for the soup! Next, add the bay leaf. 
  • After this, add the chicken thighs. Cover the pot and let it cook for about 12-15 minutes until the chicken is no longer pink. 
  • Mix in the short pasta and cook for 3-4 minutes. The short pasta cooks faster so make sure it doesn’t stay longer cooking or it will get soggy. 

Serving

  • Nothing says I love you like a bowl of chicken soup. 
  • You can serve it with a side of french bread but this recipe is delicious all by itself.
