Ingredients:
- 4 chicken pieces
- 4 potatoes
- 2 tomatoes
- 1 small onion
- 2 garlic cloves
- ¼ cup of green peas
- ¼ cup of sliced carrots
- 2 cups of chicken broth
- 2 tbsp of Yummy Blackening Seasoning
Preparation
- Rub the chicken with 1 tbsp of Yummy Blackening Seasoning.
- In a medium to large pot, heat up 1 tbsp of oil. Make sure it’s very hot.
- Now let’s seal the flavor in the chicken: Cook each side for about 4-5 minutes until the chicken has a brown yummy crust. We only need to seal the chicken, it will keep cooking later. Now, set it apart.
- To make this recipe, it’s easier and faster if you chop all the ingredients before hand: chop the onion, mince the garlic cloves, slice the carrots, quarter the tomatoes and the potatoes.
- In the same pot, cook the onion until it’s crystallized about 3-4 minutes, add the garlic, 1 tbsp of Yummy Blackening Seasoning and stir for 1 -2 minutes.
- Add the carrots, green peas, tomatoes, and potatoes
- Pour the 2 cups of chicken broth
- Return the chicken to the pot
- Cover with the lid and cook for 30 minutes in low heat, stirring occasionally. Keep an eye on the potatoes so they won’t melt.

- You can add a nice serving of white rice to soak in all the yummy juice this stew will bring to the table
