Yummy Jambalaya

Ingredients 

  • 1 pound of shrimp, clean, shelled
  • 1 Andouille Sausage 
  • 1 pound chicken breasts 
  • 1 medium onion 
  • 2 garlic cloves
  • 2 tbsp of tomato paste 
  • 2 cups chicken stock 
  • 1 can crushed tomatoes 
  • 1 cup long rice 
  • 2 bell peppers, green and red 
  • A handful of fresh green onions
  • 1 tbsp of Yummy Seafood Seasoning 
  • 1 tbsp of Yummy Blackening Seasoning

 

Preparation 

  • In a large pot over medium heat, heat about 2 tbsp of oil. Add onion and chopped bell peppers. Cook until soft, about 3-5 minutes
  • Chop the chicken breast in small bites, about the size of your thumb. Sprinkle them with a dash of Yummy Blackening Seasoning. Cook for 5 minutes or until you see the chicken turning golden brown. 
  • Time for the previously sliced Andouille sausage to enter. Cook for a minute or two and add to the mix the minced garlic and 2 tbsp of tomato paste. Stir for a couple of minutes to marry all the flavors.
  • For the next move, pour the chicken stock, the can of crushed tomatoes, 1 cup of rice and sprinkle about 1 tbsp of  Yummy Blackening Seasoning and 1 tsp of Yummy Seafood Seasoning. Cover the pot and let it simmer in medium to low heat until the liquid is absorbed, about 15-20 minutes. Don’t leave the pot unattended, keep an eye on it and stir occasionally.
  • Last but not least, add the shrimp and cook for an extra 5 minutes. 
  • Turn off the stove and sprinkle a handful of fresh chopped green onions as a final touch.

 

Serving 

  • This is a complete dish by itself. Just make sure to make enough because everyone will be asking for seconds.
