Ingredients
- 1 pound of shrimp, clean, shelled
- 1 Andouille Sausage
- 1 pound chicken breasts
- 1 medium onion
- 2 garlic cloves
- 2 tbsp of tomato paste
- 2 cups chicken stock
- 1 can crushed tomatoes
- 1 cup long rice
- 2 bell peppers, green and red
- A handful of fresh green onions
- 1 tbsp of Yummy Seafood Seasoning
- 1 tbsp of Yummy Blackening Seasoning
Preparation
- In a large pot over medium heat, heat about 2 tbsp of oil. Add onion and chopped bell peppers. Cook until soft, about 3-5 minutes
- Chop the chicken breast in small bites, about the size of your thumb. Sprinkle them with a dash of Yummy Blackening Seasoning. Cook for 5 minutes or until you see the chicken turning golden brown.
- Time for the previously sliced Andouille sausage to enter. Cook for a minute or two and add to the mix the minced garlic and 2 tbsp of tomato paste. Stir for a couple of minutes to marry all the flavors.
- For the next move, pour the chicken stock, the can of crushed tomatoes, 1 cup of rice and sprinkle about 1 tbsp of Yummy Blackening Seasoning and 1 tsp of Yummy Seafood Seasoning. Cover the pot and let it simmer in medium to low heat until the liquid is absorbed, about 15-20 minutes. Don’t leave the pot unattended, keep an eye on it and stir occasionally.
- Last but not least, add the shrimp and cook for an extra 5 minutes.
- Turn off the stove and sprinkle a handful of fresh chopped green onions as a final touch.
Serving
- This is a complete dish by itself. Just make sure to make enough because everyone will be asking for seconds.
