Ingredients
- ½ pound of Red Beans
- 1 package smoked andouille sausage
- 1 bay leaf
- 2 cups of rice
- 3 garlic cloves
- 2 celery stalks
- 1 medium onion
- 1 green bell pepper
- 3 cups chicken stock
- 2 tbsp of tomato paste
- 2 tbsp parsley for garnish
- 2 tbsp of Yummy Blackening Seasoning
Preparation
- First things first, this recipe starts the night before. In a bowl, soak the beans overnight and shake a pretty good amount of our Yummy Blackening Seasoning, about 1 or 2 tbsp. That’s how you make them extra yummy!
Time to cook!
- Start with the rice. Cook it as you normally will and set aside.
- The secret to making this recipe very easy and fast is to chop everything in advance:
- Slice the sausage
- Chop the onion, celery, and bell pepper
- Mince the garlic cloves
- Chop fresh parsley
- In a medium-large pot, heat about 2 tbsp of oil. When it’s very hot, add the onion and let it cook for 3-4 minutes until it’s crystallized. Add the garlic and bell pepper, stir.
- Next goes the sausage, cook for about 3-4 minutes.
- Now let’s add the tomato paste and 1 tbsp of Yummy Blackening Seasoning, this will add all the New Orleans flavors your meal needs. Cook for a minute or two.
- Time for the beans! Add the beans into the pot, the bay leaf, and pour the chicken stock.
- Cover the pot and let it cook for about 30 – 40 minutes, stirring occasionally. It will need to reduce, so after that time, uncover the pot and keep cooking for another 20 minutes more.
- If you have a slow cooker at home, just let it cook for as long as you want, those beans are gonna very creamy at the end.
Serving
- If you like it spicy, add Tabasco sauce to your convenience
- Sprinkle some fresh parsley when serve and a side of white rice.
